Sykesville central laundry-kitchen-dining facility
Summary
The Kitchen and Dining Expansion and Renovation at the Central Laundry Facility were multi-phased projects completed over a two year construction period. The entire project was completed within an occupied secured facility. Since the project consisted of kitchen expansion and renovation, the existing food service operations had to remain in operation preparing three daily meals for the 300 plus inmate population and 132 employees. The design parameters of this project were to expand the kitchen’s production area and upgrade the food service equipment for the preparation and re-thermalization of food product.
Phase 1 consisted of securing the site with temporary security fencing and providing the contractor with an entrance to work area while maintaining separation with the inmate population. Construction of a new 4,822-sf addition included a new loading dock area, food service preparation area with ambient, refrigerated and freezer storage, and new food service equipment. In addition, a new serving area was also constructed adjacent to the existing dining area.
Phase 2 approximately 5,785-sf, was turned over to the Contractor who began interior demolition of walls, slabs, and utilities. This area was reconfigured to accommodate the service core of the food service which contained the dietary office, cart wash area, staff and inmate toilet areas, and chemical room with associated housekeeping facilities, ice machines and ware wash areas.
Phase 3 included renovations of staff and inmate dining areas which included finish upgrades and security window replacement while being used to serve three meals daily to the inmates and staff. The window replacement of an inmate occupied area required the installation of temporary partitions which separated the Contractor from the inmate population. Mechanical and electrical service to these areas was also upgraded.
